Quinn's Renovation

Rebuilding Quinn's has been huge undertaking. When Jay and I walked in on the first day, we stepped over floor boards swollen from leaks, and peered through the darkness with only our mobile phones as light. Quinn's felt like a sleeping giant that we only needed to nudge to awaken.

Its the combination of Quinn's with the adjoining properties that really allowed us to see the potential. We scramble over walls and through the jungle that was next door and we simple began to peel back the years of neglect and wake up the sleeping giant. 

In October 2023, Jay began to build a small crew of completely dedicated men and the project began. The team has grown since this simple start, and we look forward to revealing the final next version of Quinn's. We know Dublin needs these new and unique locations, and we know that Quinn's will be truly unique. The next great premises built by Jay Bourke.

This is the work on the expansion of Quinns making it bigger and better

Building the cold rooms. These are all being rebuilt to supply the perfect pint.

The Big Ugly Jobs list is long, and the great news is that its almost complete.

  • The Roofs and Gutters have all been repaired
  • The jungle that was the next door property has been cleared and prepared for hundreds of people to enjoy
  • The sewage and water systems have been completed renewed. That you Irish Water!
  • The wiring and plumbing has all be renewed
  • The rotten timber (which was everywhere) has removed and replaced. The dancefloor will feel like new again
  • The upstairs bars have been transformed and you can now, sip you beer and look down on the Croke Park crowds as they walk by
  • The sound system will be the best in Dublin
  • The beer lines and cellars have all be complete updated. Thank you Diageo (Guinness)! We are aiming for the best pint in Dublin.

 

Above is the original bar at Quinn's which everybody should remember. These rooms have seen thousands of GAA fans buy million of pints.

These new spaces add a new feel a dimension to Quinn's. We now have excellent bars to serve customers from.

This yard is being developed into Dublins largest food terrace. It will hold over 1,000 people.

We are now moving to the most enjoyable part of any project like this. Having taken Quinn's apart and fixed up every damp corner and crumbling wall, rebuilding is starting. Putting a pub back together is where the vision transfers from Jays mind to the site, and Quinn's is transformed from a sleeping giant into a Dublin institution for the next 20 years.

We start to paint the walls and polish the floors, turn the lights and chill the beer. The Mighty Quinn awakens.

We are rebuilding this Bar on the first floor. it comes from a famous old pub in Dublin.

We had months of work with Irish Water rebuilding sewers.
